New year, new us. At least for the first 2 weeks so far. The fiance and I have been on a raw vegetable and fruit kick, part of it is because of goals the New Year inspires in us, and the other part is to get healthy for the wedding.
This recipe is from the fiance, and it is our latest snack obsession. Pair this creamy, smooth guacamole hummus with some naan, sweet bell peppers or carrot sticks and you’re golden. It’s filling because of the good fats but doesn’t leave you walking away feeling bloated. What more can you ask for?
Ingredients
1 can of garbanzo beans
1 garlic clove
3 tbsp of olive oil
3 cups of cilantro
2 ripe avocados
1 tsp of lemon juice
salt, pepper and cayenne for seasoning
Instructions
You can pretty much throw all the above ingredients in the blender. We chopped off some of the longer stems off the cilantro.
Blend until smooth and thick.
Top the guac hummus with a generous sprinkling of cayenne if you like some heat. (We do). Drizzle with a bit of olive oil.
