Turkey Bacon Egg Cups

What is your kitchen best friend? Is it your stand mixer? Air Fryer? Your chef’s knife? One of my dear friends is the muffin tin. You can make so many mini dishes with it, and most of them are easy because you basically assemble and bake – like my lasagna cupcakes. Another go-to favorite is bacon egg cups. They take 30 minutes, which include assembly and bake time but look impressive enough to wow your friends who come over for brunch. Here’s how I make them.

Ingredients

6 eggs (number of eggs depends on how many egg cups you want to make)

12 slices of turkey bacon (each egg needs two strips of bacon)

1 sprig of thyme

seasoning: salt, pepper, cayenne

Instructions

Preheat the oven to 400 degrees F.

Line each muffin cup with two strips of bacon to form a circle.

Bake the bacon for 10 minutes.

Take the muffin tin out and crack an egg into each cup. Season with salt, pepper, and a little cayenne. Add one or two small thyme leaves on top.

Bake for 12 – 15 until the yolk is no longer runny.

These go great with a glass of freshly squeezed orange juice, which is how we enjoyed them this morning. Making breakfast can truly be a hobby, don’t you think? It’s definitely one of mine.
