I’m writing this post mainly because I want a quick way to reference this Chicken Enchilada recipe that one of my close friends shared with me. Enchiladas are the best dish to make if you happen to have about half a rotisserie chicken left and a bunch of raw tortillas from Costco (they’re the best!) to use up. Making enchiladas is time consuming even when you’re using store bought ingredients. Here are my tips:
- TortillaLand Flour Tortillas at Costco are better than any other store bought tortillas you can get. It’s worth using these for your enchiladas.
- If you can, make your own sauce. The recipe from Gimme Some Oven linked above has her own enchilada recipe and if you have the time, it’s worth it.
- Pile on the fresh veg. Enchiladas are a heavy dish. That’s why I heavily load mine up with raw red onions, avocado, pico de gallo and lots of fresh cilantro. It really brightens it up and cuts through the fat.
