My mom has a wonderful persimmon tree that usually bears a ton of fruit from fall to winter. We always have plenty to share with friends and extended family, and that tree is close to my heart because it’s just like my mom – generous and beautiful.
I’ve tried a couple different recipes with persimmons, like throwing them into salads or even sliced thin into a grilled cheese sandwich (use gruyere and sourdough). My sister showed me an IG story where someone stuck their persimmons into an air fryer with butter and cinnamon sticks. I don’t have an air fryer, so below is my version. They came out really well and will be a repeat recipe for sure.

Ingredients
- 4 newly ripe persimmons (not overly ripe, they need to be firm)
- 1 cinnamon stick or ground cinnamon works too
- 1.5 tbsp salted butter, melted
- 1 lemon, you’ll need the zest and the juice from one half.
- 4 tbsp honey
- 1 tsp of vanilla extract
- 1/3 cup of hot water
Instructions
Preheat the oven to 400 degrees F.
Cut the green tops off the persimmons. Then slice down horizontally through the fat middle so that a star shape is revealed in the center.
Place the persimmons on a baking sheet.
In a bowl, combine the rest of the ingredients and whisk together. I add the liquids (lemon juice and boiled water) last.
Drizzle the syrup over the persimmons.
Cover the baking sheet loosely with foil.
Place in the oven for 45 minutes.
Then switch to broil on High for about 5 minutes.
Eat with a fork and knife. Enjoy!
