One of my big dislikes is a sad desk salad. (I’m not talking about the book). Eating lunch at your desk is a necessary evil that any 9-to-5er has to face from time to time. The husband and I usually pack salads for our lunch, but we always welcome the occasion to up our lunch game when we’re able.
A really good salad alternative is this Salmon Bowl that I came across on goop. Their suggestion for this salmon bowl is to create it at your local salad bar. I decided to buy the ingredients and assemble it myself at home.
The week undoubtedly gets busier and more tiring, so realistically I would only make this for a Monday lunch. But I kind of like having something to look forward to on Monday’s, especially if it’s a yummy meal. Here’s how to make it.
Ingredients
Salmon Filet
Brown rice
Shredded carrots
Chopped scallions
Sliced cucumbers
Sliced avocado
Sesame oil
Soy sauce
Instructions
I pan fried the salmon using my usual method.
Then all you do is assemble. Start with the brown rice, then top with scallions and a squeeze of lemon juice if you have it at hand.
Lay shredded carrots, sliced cucumbers, and avocado to the side.
Tuck your salmon next to the rice.
Since there isn’t a sauce for this bowl, you can add a little bit of sesame oil and soy sauce before eating.
