You’re busy. You’re making things happen. You’re not looking to spend forever in the kitchen. (As much as I love it, soup season is over.) But you do want bold flavor, and pickled red onions are the ultimate shortcut to making everything taste even better—sandwiches, salads, and hummus are a few of my favorites. They add a pop of color and a tangy kick that matches Aries’ dynamic energy well.

Ingredients

*Ingredient amounts depend on how much you want. One large red onion can fill a half-pint Mason jar.

  • 1 large red onion, sliced
  • 1 cup white vinegar
  • 1 tsp of salt

Instructions

  1. Place the sliced red onions into your Mason jar. Pour the white vinegar over the onions and add your salt.
  2. Place the cap back on the jar and seal it securely.
  3. Have yourself a little dance party in the kitchen by playing one of your favorite songs on the speaker. Get the jar and shake it vigorously so everything is well combined.
  4. Store in the refrigerator. Enjoy for at least 2 weeks and up to 3.
